Perched above the streets of Ibiza Town sits our rooftop cocktail bar. Offering panoramic views across the Ibiza, sunset cocktails are sipped against the backdrop of the marina, Old Town "Dalt Vila". The perfect place for evening cocktails as the sun slips beneath horizon and inky skies reveal starry nights. The cocktail menu is a mix of Experimental classics and twists inspired by Balearic flavours.
Experimental Cocktail Club Cotswolds
A gem tucked away in the heart of Cotswolds, where the fireplace crackles in the winter and cocktails are sipped on the terrace throughout summer. Experimental classics sit alongside drinks made with local spirits and herbs plucked from our garden. A cosy lounge for an aperitif, the perfect place for a nightcap sipped to the soundtrack of a DJ.
Experimental Cocktail Club Verbier
A cocktail by the crackling fire, sunk deep into a velvet armchair. The clink of ice of a cocktail shaker, the view of the Grand Combin just outside. A moment’s pause after a day outside exploring Verbier, an aperitif before dinner, a nightcap just after. Experimental classics are a comforting reminder, Alpine twists offer something new to try.

A legendary cocktail bar that began in Paris, now transported in its sixth iteration to the French Alps. An afternoon of après-ski, an evening spent sipping cocktails hidden in the lounge. The echo of a DJ in the background, a moment to sink into velvet sofas. A menu that nods to Experimental classics, an exploration of alpine flavours.
Experimental Beach Ibiza
Down sandy paths, a mirage emerges dotted with sunbeds across the sand. The sound of waves gently crashing against the shore, the hum of laughter spilling out across the beach. A place to spend the day with cocktails, where the legendary sunset is worth the pause, and dinner is best enjoyed with friends.
Bijou Plage Experimental
Tucked away on a gently sloping beach, just at the end of the iconic La Croisette, Bijou Plage Experimental is an institution in Cannes. Open year round, the iconic bolthole is a collaboration with chef Olivier Gaïatto (Le Safranier). A celebration of the Riviera’s vibrant flavours and colours, a menu the echoes seasonality and local products.

Candle light flickers, another service begins. Behind each meal, teams humbly led by chefs selected for their nuanced expertise and connection to each place. Jackson Boxer takes the helm in London and the Cotswolds. Gregory Marchand takes a playful twist on food in Paris and Biarritz. In Venice, Denis Begiqi leads the kitchen, and in New York Eric Bolyard's dishes are a whimsical interpretation of fine dining. And finally, Giovanni Passerini explores French and Italian classics in Rome and Paris.
