From the beginning
A story that began in the summer of 2007, the first chapter for Experimental. A bar tucked away, the beginning of the cocktail renaissance in Paris inspired by New York's clandestine cocktail bars of the time. Today, the story continues across cities from London, Paris and New York, to Venice, Verbier and Val d'Isère and finally, the Cotswolds.

Frenchie Biarritz
A departure from Paris for renowned chef Greg Marchand. A bolthole in Biarritz where his brasserie comes with a seafront view. A space awash with natural light, a sky-blue terrace beneath the summer sun for Sunday brunch. Local products and fresh seafood are the highlight, with a touch of whimsy and a celebration of the Basque terroir.
Spa by Regina Experimental
A subterranean sanctuary of wellness waiting to be discovered. The juxtaposition of the rugged coast balanced with the tenderness of bespoke massages, facials and rituals. Each treatment combines leading wellness products from Biologique recherche and Susanne Kaufmann, the hammam is a cocoon of warmth before, the outdoor pool to refresh after.

A treasure box of Basque artisans, makers and designers. A memento to bring home, invoking memories of the southwest France. Our boutique offers something special to remember, to gift and to cherish. Each piece is hand-selected, a reflection of the spirit of Biarritz curated through the Experimental lens.

Due north in the heart of Flatiron, the second iteration of our Manhattan wine bar and sister to the original La Compagie’s first in Paris, and then London. Hidden on a quiet street just above Experimental Cocktail Club. A place where evenings are spent over rare wines and a menu of interesting flavours by chef partner Eric Bolyard.
